Banana and Ginger Loaf

Ingredients
Large ripe bananas x 4
Eggs Large x 2
Butter, grass fed (melted) x ¼ cup
Ginger fresh grated x 2 tbsp
Almond flour x 1 ⅔ cup
Coconut sugar x ¼ cup
Baking soda x 1 tsp
Salt x ½ tsp
Cinnamon ground x 1 tsp
Method
Preheat oven to 180° C and line a loaf tin with baking paper.
Add mashed bananas to a large mixing bowl, then add ginger, melted butter and vanilla extract and whisk until combined.
In a separate bowl mix the dry ingredients together, then stir in wet mixture until combined.
Pour mixture into baking tin and bake for 35-40 minutes until top is golden brown.
Turn off oven and allow to sit in oven for ten minutes before removing.
Allow to cool for 30 minutes then enjoy.
