Banana and Ginger Loaf

This banana and ginger loaf is a moist, nourishing sweet treat made with ripe bananas, fresh ginger, and almond flour for a naturally wholesome bake. Ingredients⁠

  • Large ripe bananas x 4

  • Eggs Large x 2

  • Butter, grass fed (melted) x ¼ cup

  • Ginger fresh grated x 2 tbsp

  • Almond flour x 1 ⅔ cup

  • Coconut sugar x ¼ cup

  • Baking soda x 1 tsp

  • Salt x ½ tsp

  • Cinnamon ground x 1 tsp

Method⁠

  1. Preheat oven to 180° C and line a loaf tin with baking paper.

  2. Add mashed bananas to a large mixing bowl, then add ginger, melted butter and vanilla extract and whisk until combined.

  3. In a separate bowl mix the dry ingredients together,  then stir in wet mixture until combined.

  4. Pour mixture into baking tin and bake for 35-40 minutes until top is golden brown.

  5. Turn off oven and allow to sit in oven for ten minutes before removing.

  6. Allow to cool for 30 minutes then enjoy.
